INGREDIENTS

1 + 1/3 cup unsalted butter

3 cups All Purpose Flour, 375 grams

2 tsp Cream of Tartar

1 tsp Baking Soda

1 tsp Ground Ginger

½ tsp Ground Cinnamon

¼ tsp Ground Cardamom

¼ tsp Ground Cloves

¼ tsp Ground Allspice

¼ tsp Black Pepper

½ tsp Salt

1 ⅓ cup Granulated Sugar, 267g

2 Eggs

2 tsp Pure Vanilla Extract

Icing

1 ½ cups confectioner’s sugar

2-3 Tablespoons heavy cream

1/4 teaspoon cinnamon 


Instructions:
Begin by preheating your oven to 375 degrees Fahrenheit. Line two cookie sheets with parchment paper and set them aside.

To make the brown butter, start by melting the butter in a small saucepan over medium heat. Continue melting and swirling until you see small brown specks and the mixture starts to foam up. The butter will start to smell nutty. Immediately remove it from the heat, transfer it to a small bowl, and set it aside to slightly cool.

In a medium bowl, whisk together the all-purpose flour, cream of tartar, baking soda, and a delightful blend of spices (ground ginger, cinnamon, cardamom, cloves, allspice, black pepper, and salt). Set this mixture aside.

In your stand mixer using a paddle attachment or in a large bowl with a hand mixer, beat the remaining stick of butter along with the cooled brown butter and granulated sugar on medium-high speed until smooth and creamy, this should take about 3-4 minutes.

Add the eggs, one at a time, beating well after each addition. Once the eggs are fully integrated, add the pure vanilla extract and beat the mixture on medium speed until thoroughly combined. Make sure to scrape down the sides and bottom of the bowl with a rubber spatula as needed.

Slowly add the dry ingredients in three stages, gently folding them into the dough until fully combined.

Next, roll the cookie dough into 1-inch balls and place them on the prepared baking sheets. Bake the cookies for approximately 10 minutes, rotating the cookie sheets halfway through the baking process. Our goal is for the cookies to be lightly browned on the bottom but not on the top. If they look a bit flattened, give them another 1-2 minutes in the oven to reach their full potential.

Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a cooling rack.
